Super Fiber Cereal

Ingredients

  • 1 tablespoon sliced or chopped almonds
  • 1/4 cup quinoa, any color
  • 1/2 cup water
  • 1 tablespoon oat bran
  • 1/2 cup fresh raspberries (or frozen and thawed)
  • 2 teaspoons maple syrup
  • yogurt or milk optional

Instructions

  1. Toast the almonds in a small saucepan on medium heat until fragrant, about four minutes, stirring frequently. Remove the almonds and set aside.
  2. Combine the quinoa, water, and oat bran in the same saucepan and bring to a boil. Reduce the heat, cover, and simmer for 10 minutes. Turn the heat off and leave the covered saucepan on the burner for an additional 6 minutes. Stir in the raspberries, almonds, and maple syrup. Serve topped with yogurt or milk (if using).
