Super Fiber Cereal
Ingredients
- 1 tablespoon sliced or chopped almonds
- 1/4 cup quinoa, any color
- 1/2 cup water
- 1 tablespoon oat bran
- 1/2 cup fresh raspberries (or frozen and thawed)
- 2 teaspoons maple syrup
- yogurt or milk optional
Instructions
- Toast the almonds in a small saucepan on medium heat until fragrant, about four minutes, stirring frequently. Remove the almonds and set aside.
- Combine the quinoa, water, and oat bran in the same saucepan and bring to a boil. Reduce the heat, cover, and simmer for 10 minutes. Turn the heat off and leave the covered saucepan on the burner for an additional 6 minutes. Stir in the raspberries, almonds, and maple syrup. Serve topped with yogurt or milk (if using).
